Job Description:

Responsible for assisting in the operation of the Pilot Lines, including the proper hand-packaging, analysis and evaluation of corn and flour tortillas, fried products, and flatbread items; and the preparation of ingredients
pre-weighted batches for Pilot Lines operation.Responsible for reviewing the entire process of pilot lines including but not limited to:
The hand packing of products as well as pack/repack finished product in boxes or trays. Check the appearance and quality of finished product. Check bags to make sure proper packaging, stacking and bag-sealing.is being used. Inspect finished product to ensure they are free of foreign materials or contamination. Ensure that trays are clean and in good condition.
Inspect and maintain the culinary kitchen clean and organized.
Purchase necessary items for the pilot plant and lab through Ariba.
Ensure that a good inventory is kept for consumable items in the Pilot Plant, Baking Lab, Ingredients Room, and Office.
Verify that all R&D finished product in the warehouse and plant are not expired or spoiled.
Maintain Daily, Weekly, and Monthly inspection logs for the R&D Center, as well as the system of new ingredient documentation.
Coordinate with the plant ingredients team for large scale pre-weighed batches for plant trials. Assist in plant trials. Ingredients Preparation Duties: Adequately rotate raw materials. Ensure hold tags are correctly placed and not expired.
Follow weighing procedures and GMPs to avoid cross contamination. Follow allergen program procedures indicated in the HACCP plan. Weigh ingredients according to specifications and/or work instructions. Check the Pilot Plant Production Schedule. Laboratory Responsibilities: Perform pH, Moisture and other basic physical-chemical analysis. Perform Sticking and Shelf-Life evaluations and inoculations. Calibrate laboratory equipment such as pH meter, moisture analyzer, and scales weekly.
Food Safety Responsibilities: Protect product from contamination. Inspect equipment before and after cleaning for any possible contamination. Report any acts or conditions that may place our product at risk. Equipment Cleaning and Sanitizing: Clean pilot production floor areas, laboratory equipment and all equipment in the packaging area, including, but not limited to cooling conveyor, counter stacker, conveyors, tables, check-weigher, metal detector, carrousel, ink printer, etc. Perform other duties as assigned.EDUCATION & EXPERIENCE High School Diploma, GED or equivalent required; Associates or Technical School Graduate preferred *Any equivalent combination of related education and/or experience may be considered for the above. Willing and able to work in the evenings or early mornings if necessary.
